Pumpkin Cookies
- 1 1/4 C white flour
- 1 1/4 C whole wheat flour
- 1 t baking soda
- 1 t baking powder
- 1 t ground cinnamon
- 1/2 t nutmeg
- 1/2 t salt
- 1 1/2 C granulated sugar
- 1/2 C butter, softenend
- 1 C pumpkin puree
- 1 egg
- 1 t vanilla
- chocolate chips
Combine ingredients. Scoop about a 2 T size mound onto a greased cookie sheet. Bake at 350 degrees for about 15 minutes. I substituted half of the flour with the whole wheat baking flour {which is reflected in the recipe}. They were delicious and filling.
