Creamy Potato & Broccoli Soup
3 Potatoes
1 Onion
11/2 C chopped broccoli
11/2 C chopped cauliflower (or double the broccoli)
3 Tbsp. butter or margarine
4 Tbsp. flour
1/4 tsp salt
1 C milk
1 C cheddar cheese

Cook potatoes and onion in chicken broth until tender. Drain, reserving liquid. Steam broccoli and cauliflower until tender. For the white sauce, use 3 Tbsp butter or margarine, 4 Tbsp flour, 1/4 tsp salt and 1 C milk. Melt butter with flour and salt, being careful not to let it burn. Once mixed together, add milk, stirring constantly until thick. Add 1 C grated cheddar cheese.
Add white sauce to potatoes; add reserved liquid to get desired thickness. Add broccoli and cauliflower. Makes 3 quarts. from Lauralee Lemon
