Mom's Taco Soup (photo coming soon)
- 1 med. onion
- 2 cloves garlic
- 1 lb. ground beef, extra lean
- 1 pckg taco seasoning, following season directions
- 1 can corn, 16 oz
- 1 can kidney beans, 16 oz
- 1 can diced tomatoes, 16 oz
- 1 can black beans, 16 oz
- 1 can tomato sauce, 16 oz
Sauté chopped onion & garlic in beef. Stir in taco seasoning, corn, beans, diced tomatoes and tomato sauce. (Drain and rinse beans) Simmer for 20 to 30 minutes. Add 1 can full of water if desired. Serve topped with tortilla chips and grated cheese. Makes 6-8 servings, double for larger groups. This soup freezes very well and is a family favorite.
